WONDERFUL WEDNESDAY, June 10th


What makes today wonderful?  I woke up this morning and the Father started me on my way.  That is a blessing as far as I’m concerned because I am not promised tomorrow.


I posted a question on several of the boards that I’m on asking where people get their inspiration for their meals.  I am honestly curious because I will tell you that I am having difficulty with the meal planning.  I try to include my family in this decision, but they seem to prefer to let me make the decision and they just eat.  Thankfully, I’m blessed that I don’t have a picky bunch.  I’ve looked at the possibility of following other people’s meal plans, but I don’t feel comfortable cooking some of the stuff that I’ve seen listed.  I can honestly say that my meals this week haven’t been too bad.  For me, moderation is key.  I am not one to fix a cobbler (as I did for my husband this past weekend) and not have any at all.  I had a little bit along with one scoop of ice cream.  I need to figure out how to get some meals prepped and ready to go.  Now that my mom does not always have someone by at lunch time, I want to make sure she has something to eat and when it gets cold that she has something warm.  I want to try to start meal prepping or doing the meal in a bag type things that I can just put in a crockpot and have something good to feed my family at the end of the day.  I am trying to focus on getting the processed foods out of the house.  Perhaps I won’t be able to get all of them, but I would rather know that a lot of what is going into my family is good stuff and not processed foods that have 20 ingredients that you can’t pronounce.  There are some crazy long things in some of those foods that I can’t even pronounce.  I don’t know about you, but if I can’t pronounce it, I’m not sure I want to put it in my body.  I guess I better start checking Pinterest and such to see if I can find some meals that would be a change of pace and are good for my family.  If anyone has any suggestions for websites that you use, please share.  Happy Hump day!

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
