Cook with Me Using Trader Joe's Products Collab - Sheetpan Chicken Recipe, March 16th

Hi y'all!  Welcome to my part of the collab!  I made a sheetpan chicken and veggies topped with Everything But the Bagel Seasoning. This is what I did: 1 pound Chicken Breast 16 oz. of Simple Truth Broccoli and Cauliflower blend (I think it's a steamable bag) 3/4 pound of potatoes.  I think it was originally a pound worth but several were bad. 1 pound of asparagus Preheat oven to 350 degrees.  Line your cookie sheet with parchment paper.  I chopped my veggies and diced my chicken into small chunks.  I sprayed my veggies with Chosen Foods Avocado Oil spray.  Then added my chicken and topped liberally with the Everything But the Bagel seasoning.  Cooked for 30 minutes. Meatless Monday Collab: Meatless Lazy Man Lasagna - Feb. 17th

Meatless Lazy Man Lasagna 8 oz. of Whole Wheat Penne Pasta 15 oz. of Ricotta Cheese 4 oz. Mozzarella and 4 oz. of Parm Italian Seasoning approximately 3 cups of Homemade Marinara Sauce that I cooked up in my slow cooker. I mixed the Mozzarella and Parm together. After the pasta was cooked, while it was draining, I mixed the Ricotta Cheese with some Italian Seasoning.  Then mixed the cooked noodles in with it.  Added some sauce, some of the noodle/cheese mixture, topped with the mozzarella/parm mixture then repeated.  After two layers, I put what was left of the cheese on top and cooked on 350 degrees for 30 minutes.   I actually put mine in the freezer, but it'll be so tasty when the time comes to have it.   💚 -7 💙 -7 💜 -5

Happy Hump day friends!  It's time again for a What's Cooking Wednesday!  Today I am sharing with you how I changed up this Olive Garden Copycat Recipe for the Zuppa Toscana for the crockpot.  However, I am trying to use up stuff in my freezers, pantry and fridge so I modified the recipe using what I have on hand and trying to purchase as little as possible. I modified it as follows: Simple Truth Traditional turkey sausage, 16 oz. browned uncooked onion(s),  3/4 cup Kirkland Signature Sliced bacon,  6 slices, diced minced garlic,  1 tsp chicken stock, 4 cups Simply Potatoes Diced potatoes,  1 cup Kale/Spinach Mix - 2 cups Kroger Half and Half - 3/4 cup Cook your sausage in a large skillet and brown over medium heat. Drain and set aside Place your onion and bacon to the skillet and saute over medium heat until the onions are translucent. Happy Hump Day friends!  I am back for another edition of What's Cookin Wednesday!  Some day I will figure out how to make my kitchen more recording friendly, but right now, I'm just trying to figure it out.  I actually picked out a couple of recipes that I wanted to try.  We're expecting some cold weather around my area, which I'm sure some of my northern friends would laugh about, but it's cold to me.  The first one I decided to try was the Skinny Chicken Fajita Soup .  Sometimes I really just feel like recipes are a suggestion that worked for someone else and might work for you.  I definitely tweaked it a little bit for our family.  Honestly, my chicken wasn't cooked so I decided I'd just use my canned chicken.  Here's what I did: 2 - 5 oz. cans of chicken breast 2 - 10 oz. cans of Rotel Tomatoes 1 - 15 oz. can of Black Beans 1 - 32 oz. container of chicken stock A couple of shakes of taco seasoning because it was handy and I did...

Christmas Cookie Swap Collab - 12/07/2019

Happy Saturday friends!  It's the most wonderful time of the year!  Some fellow YouTubers have taken some time out of their schedules to share some cookies or other sweet treats together for you.  When I got invited to this collaboration by Joan (Joan's Pointed Plate), I was not really sure what I wanted to make.  Since I do not use some of the ingredients that others do, such as light butter, I decided I needed to find something that didn't have a lot of butter in it.  So I did a search of Pinterest and found a TON of great recipes, but not all of them had been updated for the new plans.  I choose a Banana Oatmeal Chocolate Chip cookie  as it really seemed like I had most of these ingredients on hand anyway.  Here's my recipe, using my substitutions. Lightened Up Broccoli Rice Casserole

A big Thanks to Kim at " A Girl and her Phone "!  I used this Broccoli-Rice Casserole  recipe as my guide. 2 c. cooked brown rice  1 (10 oz.) package frozen riced broccoli 1 (12 oz.) package frozen riced cauliflower 1 small onion, finely chopped 1 (10.5 oz.) can Campbell's Cream of Onion Soup 1/2 c. milk 1 tsp. salt 1/2 tsp. black pepper 1 tsp. garlic powder 1/4 tsp. paprika 2 c. shredded Cabot 75% Reduced Fat cheddar cheese, divided Preheat your oven to 350 degrees. Thaw broccoli and warm broccoli in the microwave for about 5 minutes. In a bowl, combine warm cooked rice, onion, cream of onion soup, milk, salt, pepper, garlic powder, paprika, and 1 cup of the shredded cheddar. Stir together until well mixed.  Fold in broccoli. Spoon into a greased 9x13-inch baking dish.  Top with remaining 1 cup shredded cheddar cheese. Bake at 350℉ for 35 - 40 minutes until bubbly and cheese is just beginning to get some golden brown ...

Well, hello, and happy Wednesday a/k/a Hump day!  This has been a busy weekend and a weekend of trying new things.  As I may have mentioned, I am trying to focus on some lower carb options.  I found a recipe for cauliflower hash browns and decided I would try to make them as an additional to breakfast casserole.  Unfortunately I didn't have 2 packages of cauliflower rice so I decided to halve the recipe.   Here's what I did:   I used my one smaller package of cauliflower rice (10 oz. package), 1 cup of the Simple Truth Organic Cheddar and 1 egg and I added some salt, pepper and garlic powder.   They were a little more eggy than I would have preferred but I didn't have the same amount of cauliflower that she had.  They are really tasty and made a good addition to my breakfast casserole.  I'm looking forward to having them this week.  Did you try any new recipes this week?  Maybe any of the recipes I've shared?...

Happy hump day!  You know that moment when your dinner preparations go EXACTLY as planned?  That did not happen with this recipe.  In all seriousness, I started out with a pretty basic Ravioli Lasagna Bake  recipe and then I realized that I needed to add some more protein in it since I have one that doesn't want to eat meat and I just happen to have some Ricotta cheese.  Then I found the Million Dollar Ravioli Lasagna recipe.  Ultimately, I did a variation of these recipes.   Unfortunately, I ran out of Mozzarella cheese and had to wait on my husband to get home from Trader Joe's with more mozzarella.  I thought we had some stashed in the freezer, but we did not. I used the Zero Point Marinara recipe, Kirkland Parm and some Mozzarella along with the ricotta and some organic ricotta and spinach ravioli.  I followed the cooking directions from the Ravioli Bake.  Overall, it turned out pretty well.  Well enough that my fami...

Happy Wednesday a/k/a Hump Day friends!  So I managed to make some flounder that everyone actually ate! *Pat self on back*  Seriously, it was pretty tasty.  I used this recipe as my guide.  Her recipe was super easy, but I used what I had on hand. I used 5 flounder fillets, Penzey's Season Salt, juice from a whole lemon, a just a small pat of butter.  I am curious about the seasoning and am looking forward to making it again.  We had steamed broccoli and Kraft cauliflower mac and cheese on the side.  Honestly, Kraft isn't my favorite like it used to be, but the cauliflower pasta wasn't too bad.  I would definitely use this recipe as my base again.  It was easy and so good.  No tartar sauce was needed for me and that says something!  Hope you have a fantastic day!

Happy Wednesday a/k/a Hump Day friends!  How's your week going?  I do have a recipe to share, but I have to tell you, Monday did not go quite as I'd planned.  I was exhausted, it was a rough night with the CPAP so I felt like I hadn't slept well.  DH and I agreed we would go "out" for lunch.  Well, my choice at the deli in our building was not a great choice and used the remainder of my points for the day.  So I started plotting and planning what I would eat for dinner...DH thought he was going to have to work late...so I offered to bring him lunch.  As this week is so busy, with a Bible Study beginning Tuesday night with EndTimes Ministries , then our regular Wednesday night service.  Given that, I knew I had to get shopping done on Monday night.   Now for the recipe.  Have you seen those CeCe's Veggie Co. Happy Wednesday a/k/a Hump Day, friends!  I hope everyone has had a good week thus far.  My sweet husband and I had an unexpected mid-week date last night.  Several of the theaters in our area have $5.00 movie tickets on Tuesday nights.  It was an enjoyable evening and made me thankful that I kept my points lower during the day or I wouldn't have had enough points to have dinner at the theater.  I had already prepared a Slow Cooker Quinoa Chicken Parmesan Soup .  It turned out quite well.  Since we went out to eat at the movie, DH and I only had a taste, but DD had two bowls, which definitely means she likes it.  I used more of my Zero Point Marinara instead of the diced tomatoes (I have diced tomatoes in my marinara that I leave chunky).  I will be having this for lunch and White Chicken Chili for dinner.  Hope everyone has a great one!

Happy, happy hump day friends!  We've made it to the halfway point of the week!  On Saturday, I was reminded of a quick and tasty sheet pan meal that I had not made in quite some time.  What meal?  Chicken Fajitas!  Absolutely tasty and very easy to make! I had some chicken that I needed to use up.  I had planned on making 2 batches.  One to freeze for another meal and one to eat on Sunday.  I decided that since I didn't have any chicken thawed for our lunches this week that I would just make all of the chicken breasts I had left in the fridge from Costco.  I had used a package for Chicken Tikka Masala but had two more to use.  My sweet husband sliced onions for me and then diced some for our Meatloaf on Sunday.  I sliced up some bell pepper (green, red, yellow and orange) and then diced the rest for our meatloaf and a breakfast casserole.  Here's my basic recipe below: I used 5 chicken breasts, which I sliced into strips...

Last week, after watching multiple YouTube videos and searching through some recipes, I decided to try to make the "Lazy Man Lasagna" that I saw here .  As you may imagine, I used her recipe as a guide and put my own spin on it.  The ingredients that she shows are:  1 lb. rigatoni 16 oz ricotta cheese 2 cups shredded mozarella cheese parsley jar of sauce 350 degree oven for up to 30 minutes. Using her recipe as a base and using what I had on hand.   What I used was  1 pkg of Whole Wheat Penne Pasta 15 oz. of Ricotta Cheese 4 oz. Happy hump day friends!  In the spirit of being prepared for the week AND getting my blue dot each day this week, I was inspired to make some garlic hummus that I saw Kim ( PrepWhisperer ) shared on her YouTube channel.  My husband and I love garlic hummus so I knew the minute I saw it that this was going to be a big hit in our house.  This was definitely a win!  The recipe is below: Garlic Hummus Makes approximately 1.5 cups/8 servings 1 can of garbanzo beans, drained and rinsed 2 tbsp Lemon juice 1 tsp Garlic 1/2 tsp Cumin 2 tbsp Tahini (add last) 2 tsp Olive Oil (after you begin processing) Water (as needed to get it to the consistency you want) Put beans in the food processor.  Add Lemon Juice, Cumin, garlic and then tahini. Happy hump day friends!  My son and I had enjoyed some time baking and making candy this past weekend.  Not really finished with what I wanted to make this year, but it was lots of fun!  One of the items that we made were Grinch Cookies .  I saw them and thought that our little Sunday School class would enjoy them greatly.  So sweet, I got a thank you card from the class for my effort.  They really turned out well.  I really hope that you enjoy them if you try them yourself.  Mine don't look quite the same as hers does in the blog, but they were so fun to make!  

What's for Dinner, Wednesday, Nov. 14th

Happy Wednesday, friends!  It's been a crazy week, but I am feeling positive overall about it.  This weather in our area has been crazy.  A few weeks ago while binge watching YouTube, I ran across a video of dinners made by Jess on her YouTube Channel WW Journey to Healthy .  One recipe that she made one that really struck my fancy considering we LOVE Chinese food around this house.  What could be better than a recipe that tastes great and doesn't use all of my daily SmartPoints in one meal?!  The recipe is a Healthy Beef and Broccoli .  Oh.My.Yum! Memories of Mom Monday, Jan. 23rd

As I am fairly new to the bulk meal prepping bandwagon, I can definitely understand why the books I read said to write down your plan.  I was reminded this weekend of my Mom's meal plans.  She was amazing when I was younger about fixing something for us that while it may have been the same base to it.  For example, I recall her making pinto beans and cornbread.  Then the pinto beans may be had as leftovers or she would make chili beans.  We would use the chili beans to make Frito Pie or put the chili on baked potatoes.  I wish I had the ability to think of things that way.  Honestly, I could have beans and cornbread (especially Mom's special cornbread) for days and not get bored.  But my family is not entirely in agreement there.  I recall my Mom's special cornbread was posted in a PTA cookbook when I was in 2nd grade.  I know things like that seem to have gone by the wayside since the internet and Pinterest have made it so easy to s...

Making Me Better Monday, January 25th

While I can say the weekend didn’t go quite as I had planned, I can say it was a good weekend.  My DS25 paid us a surprise visit on Friday evening.  Saturday, while we were waiting on Salvation Army to pick up our donations, I made some Mom-lets (they are muffin omelets that I make for my Mom) and washed and cut up some bell pepper (about 9) and made some bread.  It was a busy day, but I feel like I got something accomplished even if it wasn’t as much as I had hoped to accomplish.  My back muscle spasms started up again so I think it’s about time for a visit to my chiropractor.  I did hit my step goal on Thursday and Friday and am trying to hit it today as well.  I have also made some decisions that I think will help me greatly.  I have been trying to use my Day-Timer more consistently these days.  I have been posting stars on each day I hit my step goal.  I tend to be visual when it comes to things like that so I know it will help....

Take Care of ME Tuesday, January 19th

Overall, it was a good weekend.  I had yesterday off.  I did not take as much control over my weekend as I would have liked, but I did get some food prep done.  I feel much better when I am able to prepare for the week and have a plan in place.  I have boiled eggs, carrots, hummus and some fruit that I can easily access for snacks.  Also, I decided I would have a rice bowl.  I saw a recipe for them while trying to plan for the week and I decided to do my own spin on them with what I had handy.  I have 1 cup of brown rice, 1 cup of canned pinto beans (rinsed and drained), 1 cup of canned corn, lettuce and tomatoes with about an 1/8 cup of shredded cheese.  It sounded good to me, so I'm hoping it will be as good as it sounded in my head.  I am also wanted to have some veggie pitas or wraps this week.  I am really trying to take things one step at a time and focusing not so much on the weeks in the future, but one day or one week at a t...
