Meal Planning Monday, May 25, 2020

Happy Memorial Day friends!  Dinner plan for this week: Monday: Burgers Tuesday: Bean and Cheese Enchiladas Wednesday: Lazy Man Lasagna and garlic bread Thursday: Hamburger Stroganoff Friday: Chicken and Broccoli Rice Casserole Probably over the weekend, we'll have pizza or fish sticks, but we'll see. Breakfasts are yet undecided.  I am toying with an idea for a new to me overnight oats recipe, so I may try that and maybe some more of the strawberry shortcake overnight oats.  Nice to have a variety. Lunches, salads and sandwiches for me, most likely. Hope everyone had a great week!

Meal Planning Monday, May 18, 2020

Our dinner plan for this week, although, as I always say, these are subject to change without notice. Monday: Twice Baked Potatoes and salad Tuesday: Taco Casserole Wednesday: Lazy Man Lasagna and garlic bread Thursday: Chicken and Broccolli Rice Casserole Friday: Fish Sticks and Mac and Cheese and a yet unnamed veggie. For breakfast, at least 2 days this week, I made a variation of the Birthday Cake Overnight Oats using what I had on hand.  I think I may have to adjust the recipe a little bit as it may be a little too sweet.  Most likely eggs for the rest of the week. Lunches for me, probably salads or sandwiches. Snacks, garlic hummus, veggies and fruit and yogurt/vanilla yogurt mix. If you want to see me talk about it on video, you can find that  here .

Meal Planning Monday, March 9th

Happy Monday friends!  I'm back to share my meal plan for this week. Monday - Cheeseburger & Tot Casserole Tuesday - Taco Salad Wednesday - Lentil Chili Frito Pie Thursday - Cod and roasted veggies Friday - 2 Ingredient Dough Pizza After the rough week this past week, being hit with a migraine and knocking me off my streak, it was frustrating.  Thankfully, I didn't gain a ton, slightly less than 0.5 lbs.   So goes the plan for this week.  I'm determined to focus on the eating the zero point foods this week.  The Cheeseburger & Tot Casserole isn't super low in points, but that's part of why I'm having it earlier in the week.  However, I will have the points for that.  I feel more in control of things this week. What is on your meal plan for this week? I'm excited to hear!  Have a great week!

Meal Planning Monday, Feb. 17th

Hi Friends!  Hope everyone had a fantastic Valentine's Day!  Our actual Valentine's Day was pretty ordinary.  Saturday evening, we went to dinner with some other couples from our church and Sunday we headed to Painting with a Twist for a fun couple's painting.   For now, our meal plan is as follows: Monday: Burgers, fixings and tater tots or fries. Tuesday: Homemade Burrito Supreme, Spanish Rice and refried beans Wednesday: Beans and special Cornbread Thursday: Tomato Soup and Grilled Cheese Friday: 2 Ingredient Dough Pizzas No plans for Saturday or Sunday, but that seems to be fairly normal for me.  We have a wedding to attend on Saturday for some church friends.

Spaghetti, salad and garlic bread Veggie Pizza Lentil Tortilla Soup Veggie Plate Fried Rice Cod, Broccoli and roasted potatoes As always, this plan is subject to change without notice.  I made a pancake bake and will likely make another or a breakfast casserole to get me through the rest of the week.  I am determined to make it a good week!  What's on the menu for you this week?

Meal Planning Monday, January 6th

Happy Monday friends!  I hope that you have had a wonderful weekend!  After my gain this week, I'm determined to have a good on plan week!  I have reviewed some recipes and I'm also trying to use up some of the food that we have in the fridge and freezer and pantry before I try to get some meal prepping done later this month.  While I am sharing the recipe links to the ones I'm using, I am modifying some in order to use up some of the foods I currently have in my fridge and freezer.  Admittedly, I will have to buy some things at the store, I don't think it will be a really expensive trip. Olive Garden Zuppa Toscana Recipe - Crockpot Copycat Slow Cooker Sausage and Potato Casserole Slow Cooker Pesto Ranch Chicken Easy Slow Cooker Taco Pasta Crispy Baked Cod with Cheesy Potatoes & Roasted Broccoli Stromboli My plan is to make some of the 2 Ingredient Dough bread sticks as shown by Kathy over at  Kathy's WW Journey   I have been hes...

Meal Planning Monday, December 16th

Happy Monday friends!  I hope everyone had a great weekend!  Ours was busy but good!  DD performed at our "Santa's Village" in our city.  Saturday, my sweet husband took me to see It's a Wonderful Life on the big screen!  It's not his favorite movie, but he knows how much I love it.  Then a get together with my church family and church today to watch our kids perform.   Breakfast:  Likely another breakfast casserole like last week because it really was good.  I am in debate about making the 2 ingredient dough, just a small batch and using that in place of the biscuits, but haven't decided yet since I'm not feeling 100% today.  It may be easier just to use the biscuits this time.  Lunches this week: Chicken Fajita Soup, I may do a cook with me, but haven't decided yet since this is a first time recipe. Egg Roll Soup, I also may do a cook with me on this one, but again, new recipe. Dinners this week: Macaroni and Ch...

Meal Planning Monday, December 2nd

Happy Monday friends!  I hope everyone had a fantastic long weekend!   I didn't get as much meal prepping done as I would have liked, but I do have a game plan for this week. Dinners are as follows: Hamburger Stroganoff Chicken and Dressing (no, I still haven't made it) Quesadillas, Fat Free Refried Beans and Spanish Rice Spaghetti, Garlic Bread and Salad Stromboli - I am thinking of trying a chicken, bacon, ranch one. For breakfast, I haven't fully committed to anything yet.  I think it may be varied.  Eggs in a basket, chaffles, etc.  Lunch is also varied, but I may prepare a soup for us for this week.  What are you having this week?  I would love to hear about it! :-)

Meal Planning Monday, November 11th

Happy Monday friends!  I hope everyone is doing well.  Thought I'd take a moment and share my meal plan for the week. Also, I know for those of us on WW, formerly known as Weight Watchers, there is some excitement as the new programs roll out officially today!   I will be heading to a meeting tonight to gather the information and make a final decision.  While I know I need to track and have done pretty well on Freestyle, I feel like I may change to the Purple plan.  I will continue to track because it is what works for me.  Okay, now for the meal plan for the week: Monday: Family dinner out. Tuesday: Vegetarian Pasta e Fagioli Wednesday: Creamy Chicken Tortellini Soup Thursday: Beans and Cornbread Friday: Leftover Patrol Saturday: Chicken and Dressing Sunday: Unknown I am getting a little better about planning more specifically for the day right now, but we'll see if that continues.  I hope everyone has a fantastic week...

Meal Planning Monday, October 21st

Happy Monday friends!  I hope everyone had a GREAT weekend!  It's time again for Meal Planning Monday!  Yay!  Okay, so, I'm going to be real here for a minute...don't be shocked!  I didn't get everything made this week that I intended to.  The waffle sticks and the egg bakes didn't get made.  I started getting a migraine again.  I'm really getting annoyed because they are rearing their ugly head again.   The rolled tacos didn't happen, the beans and special cornbread didn't happen, but we still managed to eat this week and not starve to death!  Dinners that were planned this week, not all of those happened either!  What I planned: - Bean Burritos; - Lima Beans and Cornbread; - Lentil Soup; - Spaghetti, salad and garlic bread; - burgers and fries;  - fish and riced cauliflower risotto.   What we had: Monday: Lima Beans, cornbread and ham steak. Tuesday: Trader Ming's Kung Pao Tempura Cauliflower ...

Meal Planning Monday, October 14th

Happy Monday friends!  Hope everyone had a great weekend!  We had a busy weekend, but it was good!  With our first real cold snap at the end of last week, I'm really feeling like fall is upon us! Meals for this week are as follows: Breakfasts are waffle sticks and an egg bake. Lunch plans are rolled tacos (bean and cheese), cheeseburger and tot casserole and beans and my mom's special cornbread.  My plan with the cornbread is to make it in the brownie pan that I just got from Pampered Chef so that I can have individual portions already. Dinner plans are: - Bean Burritos; - Lima Beans and Cornbread; - Lentil Soup; - Spaghetti, salad and garlic bread; - burgers and fries;  - fish and riced cauliflower risotto.  I'm looking forward to this week's meals!  What are you having this week?

Meal Planning Monday, October 7th

Happy Monday friends!  I hope everyone had a great weekend!  It was my 30 year class reunion this weekend so I got to see some people I haven't seen in years.  Last week was a bit of a rough week food-wise, but we made it through and I had a loss on the official scale!  I think it's a number I've seen before, but it's still going in the right direction.  Okay, let's get into it.  Meals for this week are: Breakfasts: waffle sticks using my new Pampered Chef pan and probably a breakfast casserole for me.  Lunches:  Combination of salads, Lentil Tortilla Soup, Bean and Cheese Quesadillas and Bean and Cheese Rolled tacos a/k/a taquitos. Dinners: Tomato Soup and grilled cheese; Vegetarian pasta e fagioli soup ; Roasted Veggies and Macaroni and Cheese; Vegetable fried rice; and  Vegetable Lasagna. I am excited about this week and looking forward seeing how I can improve this week.  I had 4 days of blue dot days, walked more ...

Meal Planning Monday, September 30th

Happy Monday friends!  I hope that everyone had a great weekend!  We had some homecoming preparations for our daughter.  What are you having for your meals this week?  Last week was yet another stressful week, which made for a not so great food week.  Meals didn't get cooked as quickly as I would have liked and wound up being different than I planned, but it's okay.  I'm feeling a little more "head in the game" this week.   Breakfasts this week:  Pancake bake for my daughter and probably a breakfast casserole or eggs for me. Lunches: For my daughter, Lazy Man Lasagna (meatless) and sandwiches. For the rest of us: salad, sandwiches and hamburger Philly Cheesesteak over cabbage Dinners:  a Mexican casserole that I haven't made up yet.  Fish and veggies Kunk Poa Tempura Cauliflower with rice Fettuccine Alfredo (I'll probably use the spaghetti squash I just cooked) Sandwich night Last week, we wound up at The Ultima...

Meal Planning Monday, September 23rd

Happy Monday, friends!  Where have I been?  It was a rough week and I just never found the time to sit down.  For those of you that know me, I am not a big fan of change.  We had a big change at our office because one of my co-workers left our office for another opportunity.  I wish her well in her new venture.  Time was limited to meal prep for this week, but I really needed to be "on" this week like I was a couple of weeks ago. Breakfasts:   Chocolate Chip Pancake Bake  Breakfast Casserole. Lunches:  Hamburger Philly Cheesesteak on cabbage Spaghetti Squash and chicken meatballs Veggie Lo Mein Noodles Dinners:  Lasagna Burritos Kung Poa Tempura Cauliflower Fried Rice Salad Night Hopefully we will enjoy the Philly Cheesesteak over the cabbage.  I'm trying to keep it lower carb where I can, but I've decided for right now not to focus so much on that after my really off week. I've got ideas in my head for ...

Meal Planning Monday, September 9th

Happy Monday friends!  I hope everyone had a GREAT weekend!  Mine was a bit busy, but it was good.  I got to enjoy some quiet time, but I got some good meal prepping done.  While my weigh in didn't go quite as planned, I am so seriously planning on a GREAT week!   As they say, if you fail to plan, you plan to fail.   With that being said, I was struggling to eat the breakfast casserole by the end of the week.  This week, I made two different breakfast items to give me some options.  I made a ham, egg and cheese breakfast casserole, some cauliflower "hash browns" and a pancake bake.  I also made a pancake bake for my DD.  Honestly, because I struggle having the same thing for days on end, (really how do people do that??) I try to make different things that I can have on different days.  As last week was so crazy and I didn't eat everything I prepped, I still have some leftovers for this week.  So I will use that ...

Meal Planning Monday, September 2nd

Happy Monday friends!  For my friends in the U.S., Happy Labor Day!  So, on my day off, I'm not really making an effort to "rest", but to use this opportunity to meal prep!  Here's the funny thing, I knew this challenge was coming and I had ideas, but I did not plan beforehand.  I'll be honest, my first day (yesterday), was not great because I felt so out of sorts and it was stressing me out!  So, Sunday, after church, we got ran to the library and I headed off to Marshall's, HomeGoods, Sprouts and Kroger.  I think I went a smidge crazy at Marshall's and HomeGoods, but I got some new placemats and some napkins.  I also went a little crazy with the food finds.  I am excited because AGAIN at HomeGoods, I found some extremely low carb lasagna noodles, which is a little funny because I was just asking what I could use besides zucchini on my FB page.   I actually came home last night, browned a pound of bison, a pound of sausage for my br...

Meal Planning Monday, August 26, 2019

Happy Monday friends!  Hope you had a good weekend!  I was pretty much didn't eat anything after breakfast on Wednesday.  I'm not sure what exactly was going on, but the physician assistant said stomach bug.  Suffice it to say, I didn't really eat much nor did I stick to the meal plan.  I even missed my women's conference that I was so excited about!  😥  Better to have missed than to make others sick.  This week we are still playing it by ear.  So, meals this week are really dependent on how I am feeling.  So far, burgers and a side, fish and sides, likely a veggie plate night and fettuccine alfredo.   Hoping for a good week and that I am feeling much better.  Have a great one!

Meal Planning Monday, August 19th

Happy Monday Friends!  I hope everyone had a great weekend!  Ours was busy but it was good.  We did some painting at church to try to make a space for our little bitty folks and "trading spaces" for our youth and young adults classes.  It made the weekend pass quickly, but aside from that, we enjoyed some family time too.  We celebrated our anniversary belatedly with my in-laws who were in town before heading north again.  It is such a blessing to have some family time.  Then I find out a cousin passed away from the Dobbs side of my family, so there was a family night to add to the mix as well.  Our little Allen Life Chapel was pretty packed yesterday as well.   At weigh in on Saturday morning, I was down 0.6.  Not what I was hoping but my eating was not 100% on Friday.  After dinner with my in-laws, etc., I have decided I will not follow the WENDIE Plan for this week, but will act like I've used up my weeklies and just foc...

Meal Planning Monday, July 29th

Happy Monday friends!   So many things we didn't use last week and need to make this week, but a lot of it I can prepare meat on the side and put it into only part.   We had a "family meeting" to discuss with my daughter the fact that I need to be able to cook some meat.   As she has made this decision to go meatless, I just really wanted to discuss with her before just fixing meat.   I told my husband that I will likely make it and freeze it in smaller amounts so we could pull it out if we want to use it for something.   Our plan for meals this week will look a little like this: -         Smothered bean burritos -         Roasted veggie bowl with quinoa -         Spaghetti and zero point marinara and salad -         Taco Salad -         Macaroni and cheese and veggies - ...
