Trials of a Long Haired Girl tries...a Vintage Recipe...Peanut Butter Bread

  From my 1914 Recipe book:   This recipe is handwritten.  Although, not all of the recipes are and it appears that some are from a later time period (1934, specifically) and are cut from the newspaper.   As I began to type out this recipe, I realized that she only listed the ingredients, nothing more.  No instructions on how to combine or what temperature to bake it on and for how long.  So, I winged it.   Peanut Butter Bread   2 cups Flour 1 teaspoon Baking Powder 1 teaspoon Salt 1/2 cup Sugar (or less) 1/2 cup Peanut Butter 2 Large Eggs Milk to make stiff batter (about 1/2 cup)   Directions: 1.        Preheat oven 350 degrees. 2.        Grease loaf pan and set aside. 3.        Combine Dry ingredients (flour, baking powder salt, sugar). 4.        Beat your eggs and add them to your dry ingred...

Happy Memorial Day friends!  Dinner plan for this week: Monday: Burgers Tuesday: Bean and Cheese Enchiladas Wednesday: Lazy Man Lasagna and garlic bread Thursday: Hamburger Stroganoff Friday: Chicken and Broccoli Rice Casserole Probably over the weekend, we'll have pizza or fish sticks, but we'll see. Breakfasts are yet undecided.  I am toying with an idea for a new to me overnight oats recipe, so I may try that and maybe some more of the strawberry shortcake overnight oats.  Nice to have a variety. Lunches, salads and sandwiches for me, most likely. Hope everyone had a great week!

Our dinner plan for this week, although, as I always say, these are subject to change without notice. Monday: Twice Baked Potatoes and salad Tuesday: Taco Casserole Wednesday: Lazy Man Lasagna and garlic bread Thursday: Chicken and Broccolli Rice Casserole Friday: Fish Sticks and Mac and Cheese and a yet unnamed veggie. For breakfast, at least 2 days this week, I made a variation of the Birthday Cake Overnight Oats using what I had on hand.  I think I may have to adjust the recipe a little bit as it may be a little too sweet.  Most likely eggs for the rest of the week. Lunches for me, probably salads or sandwiches. Snacks, garlic hummus, veggies and fruit and yogurt/vanilla yogurt mix. If you want to see me talk about it on video, you can find that  here .

Meatless Monday Collab: Meatless Lazy Man Lasagna - Feb. 17th

Meatless Lazy Man Lasagna 8 oz. of Whole Wheat Penne Pasta 15 oz. of Ricotta Cheese 4 oz. Mozzarella and 4 oz. of Parm Italian Seasoning approximately 3 cups of Homemade Marinara Sauce that I cooked up in my slow cooker. I mixed the Mozzarella and Parm together. After the pasta was cooked, while it was draining, I mixed the Ricotta Cheese with some Italian Seasoning.  Then mixed the cooked noodles in with it.  Added some sauce, some of the noodle/cheese mixture, topped with the mozzarella/parm mixture then repeated.  After two layers, I put what was left of the cheese on top and cooked on 350 degrees for 30 minutes.   I actually put mine in the freezer, but it'll be so tasty when the time comes to have it.   💚 -7 💙 -7 💜 -5

Meal Planning Monday, Feb. 17th

Hi Friends!  Hope everyone had a fantastic Valentine's Day!  Our actual Valentine's Day was pretty ordinary.  Saturday evening, we went to dinner with some other couples from our church and Sunday we headed to Painting with a Twist for a fun couple's painting.   For now, our meal plan is as follows: Monday: Burgers, fixings and tater tots or fries. Tuesday: Homemade Burrito Supreme, Spanish Rice and refried beans Wednesday: Beans and special Cornbread Thursday: Tomato Soup and Grilled Cheese Friday: 2 Ingredient Dough Pizzas No plans for Saturday or Sunday, but that seems to be fairly normal for me.  We have a wedding to attend on Saturday for some church friends.
