Tuesday, December 5th

Good evening all!  I hope everyone had a great day!  You know that moment when things just don't go as planned?  Yep, I had one of those days.  While I think that my dinner plan was a good one, it wound up changing.  

Today's meals: Breakfast was my breakfast smoothie, coffee with coconut milk creamer.  Lunch was my Subway steak and cheese salad with a little ranch and 2 of the small packages of Club crackers.  Dinner was leftover pizza (1 small piece and 1 standard size piece and 2 cheese sticks.  Water to drink all day.  I was a little lax on getting my steps in today but still managed to get my current goal of 6,000 steps.  I wanted to hit 10,000 but we got a little busy and it was hard to keep moving and type at that point.  I did get in 39 active minutes so that's a positive.  

My spaghetti sauce didn't get started as early as I wanted, but it is prepared and currently in the fridge so we can make a quick dinner tomorrow night.  My spaghetti noodles are already prepared so I only have to warm things up and fix some garlic bread.  It should make for a quick dinner.  Breakfast will likely be my breakfast smoothie again and coffee with coconut milk creamer.  Lunch will be the 7 can soup that I currently have going in the crockpot.  I used the Pioneer Woman's recipe as a base and modified it a bit to work with what I had in the pantry.  While it may not be the most point friendly meal, it will be warm and with the (finally) cooler weather we are getting, I will be looking forward to it.  I will likely have some green tea and peppermint as well.  I need to get my meals pre-tracked for tomorrow.  I feel so much better when that is done.  Have a great night!

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
