Tuesday, May 23rd

Good evening friends!  I must apologize for last night's post.  I literally sat here with the computer in my lap and dozed smooth off.  When my husband woke me up getting ready for bed, I just didn't have it in me to do more than put a picture in.  I've posted everyday in May, although a couple of times it's just been a picture.

I have really been trying to do better with my eating.  I went over my points today, but still feel like I made some better choices today.  My breakfast wasn't the best choice, but lunch was a tasty salad with 0.5 oz of shredded cheese and 2.8 oz. of hamburger meat and 33 grams of Catalina.  Dinner was a roast (approximately 3 oz.), 2 King's Hawaiian rolls and Brussels Sprouts.  My plan is to have a salad again tomorrow, but perhaps with not so much dressing and such.  And I will definitely have more than a bacon, egg and cheese croissant for breakfast.

My walking has definitely been lacking today.  We did get a new person hired and she started yesterday.  I am hoping that with all of us working that I can get back into my walking routine.  It's still been crazy this week, but I'm glad that things are finally calming down.

How is everyone else doing?  I'm trying to get back to focusing on drinking my water and slowing down on the Dr Pepper again.  I did find when I weighed in on Saturday that I lost 0.2 lbs.  I really want to make sure that I am making progress and not just spinning my wheels.  Okay, before I got to sleep again while typing, I'm going to bring this to a close.  I hope everyone has a great night!

  1. King's Hawaiian rolls are awesome! I am still working on cutting back soda. It's hard but definitely pays off.

What's Cooking Wednesday, May 7, 2025

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

Picnic in the Park Collab

S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
