Tuesday, May 30th

Happy Tuesday, friends!  I hope everyone had a fantastic Tuesday!  While not a perfect day, I still feel pretty good about my choices.  Breakfast was a Trader Joe's Pretzel bagel with about a tablespoon of whipped cream cheese.  Lunch was a salad with .5 oz of shredded cheese, 3 oz. of ground beef, tomatoes, mushrooms, red bell pepper and about a tablespoon of dressing.  Snacks were a Golden Delicious apple with 1 tablespoon of crunchy peanut butter and about a cup to a cup and a half of grapes.  Dinner was Trader Joe's Sun-Dried tomato chicken sausage on a hot dog bun and about 1/2 cup of baked beans.  I am in debate on whether I want some Halo Top or not.  I did go to the store tonight while they are still on sale and stocked up on about 6 more.  I just can't see spending $6.00 for a small container of ice cream.  I did buy ice cream for DH and the kids as well.

I think I have made the decision to carry this everyday thing into June.  It seems to help me get and be accountable.  I did hit my step goal today.  My goal is 6,000 for now and I hit over 7,000 steps today.  I took a few minutes and did a one mile walk with Leslie Sansone while my bosses were in the kitchen for lunch.  It may not seem like much, but I tried to walk a little every hour.  I am shooting to do that again tomorrow.

I made another salad for myself for tomorrow.  I need to prepare snacks for tomorrow and get my dressing as well.  I want to continue trying to make some good choices, but honestly, I know there are going to be some days that I just don't want to cook and I need to figure out how to deal with those as well.  I definitely need to get a back-up plan in place for those nights or the nights when there is not much time.  I have a busy day ahead tomorrow.  I hope everyone has a great night!

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
