Meal Planning Monday, October 21st

Happy Monday friends!  I hope everyone had a GREAT weekend!  It's time again for Meal Planning Monday!  Yay!  Okay, so, I'm going to be real here for a minute...don't be shocked!  I didn't get everything made this week that I intended to. 

The waffle sticks and the egg bakes didn't get made.  I started getting a migraine again.  I'm really getting annoyed because they are rearing their ugly head again.   The rolled tacos didn't happen, the beans and special cornbread didn't happen, but we still managed to eat this week and not starve to death! 

Dinners that were planned this week, not all of those happened either!  What I planned:

- Bean Burritos;
- Lima Beans and Cornbread;
- Lentil Soup;
- Spaghetti, salad and garlic bread;
- burgers and fries; 
- fish and riced cauliflower risotto.  

What we had:

Monday: Lima Beans, cornbread and ham steak.
Tuesday: Trader Ming's Kung Pao Tempura Cauliflower and homemade fried rice.
Wednesday:  Subway sandwiches after church, we were short on time.
Thursday:  Spaghetti and garlic bread (spaghetti squash for me).
Friday:  Fend for yourself night...also known as my sweet husband and daughter were having Daddy/Daughter time and I got a migraine. 

Planned for this week:

Breakfasts:  We're going to try the waffle sticks and egg bake again.  I think I'm going to do a Denver Omelet inspired egg bake.  Waffle sticks for my daughter.

Lunches:  Still up in the air, but so far, I have a sheet pan Cauliflower/turkey smoked sausage/green beans.  Also planning on making that lo mein that I made for my daughter a couple of weeks ago for myself using my spaghetti squash.  I have some rice noodles and some other noodles that I need to use so I may try to find some recipes for that.

Dinners:  Vegetarian pasta e fagioli soup, Quesadillas, refried beans and Spanish rice, Create your own Salad night, Lazy Man Lasagna, salad and garlic biscuits, and lentil soup.    

As always these are subject to change, but that is my plan at this point.  What do you have on your meal plan?

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
