Take It One Step at a Time Tuesday,

Happy Tuesday, friends!  I hope everyone is having a good week thus far.  I was promptly reminded last week that the best laid plans don't always make it to fruition.  I did really well last week moving and getting some 30 minute workouts in, meals were tracked and I had blue dot days.  Then Thursday, my rib popped out of place and everything got thrown off.  My food has not been great since then because I've not really been able to do much.  For Monday, I used the remains of a salad kit and some spinach, grape tomatoes, fat free feta cheese, Greek dressing, Kalamata olives and some roasted chickpeas for lunch.  Mostly it was a lot of measuring.  With my sweet husband's help, I made an easy chicken pot pie recipe.  Tonight we will honor my Mom's birthday by having dinner at Red Lobster.  Most years, she asked to go to Red Lobster so this is one of the things we do to honor her.  For those of you that my Mom in person, she was something special.  She was a "Mom" to many and she loved and was loved by many people.  Some days being without her is simply overwhelming.  I am so thankful for that time with her and the many lessons that she taught me.

After my rib popping out, I was reminded that I can only focus on the things that I CAN control instead of worrying about all the things that I cannot control.  I have heard people make the statement after they had their specific plans that God laughed.  Sometimes I feel that way about this weight loss journey, but the fact is that life is always changing.  Everyday isn't going to be perfect or go according to my best laid plans, but I will still go into each week/each day with some sort of plan.  Some days we can only take one step at a time and control what we can.  I have found this especially during my weight loss journey and will leave you with the following:

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

Meal Plan (with a little prep and planning) Monday, May 5, 2025

Happy Monday, friends!  I hope you are looking forward to a good week!  It's time again to share my meal plan for the week.  I suspect breakfasts will be fend for ourselves.  Last week, I think we all ate a lot of cereal.  Lunches this week will likely be chicken pasta meal with salad and meat pies.  I am honestly exhausted after last week. Our meals for the week are going to be relatively easy and may even be repeats of meals I have had on the plan the last several weeks. Monday: Homemade Hamburger Helper Cheeseburger Mac Tuesday: Barbacoa tacos Wednesday: Mississippi Chicken, mashed potatoes and a vegetable Thursday: Spaghetti with salad and garlic knots Friday: Easy Chicken Parmesan Saturdays and Sundays, we normally have breakfast in and do carryout for lunch or dinner.  Exercise wise, I will continue with my plan from last week, which was to do two workouts using my pedals, at least 10 minutes each) on Monday-Wednesday-Friday.  I did this las...
