Make It Happen Monday, October 1st

I know it's been a minute since I've been here and I really need to get myself back into a better routine.  I've been dealing with some personal health issues.  I will say this, I am not a fan of doctors that do not listen.  I will be calling another doctor to see if I can find one who does listen.  I will say that the last few weeks have been a struggle to move because the medication made me feel horrible.

I did join a challenge last Monday, which I did pretty well at until Friday when I got sick.  I am trying to string more good days together where I hit my "challenge" goals.  While it may not seem like a huge deal, it's a start to move in the right direction.  Currently I'm working towards getting a blue dot (this may only mean something to those of you on WW), hitting 5,000 steps per day and getting in at least 64 oz. of water everyday for 6 weeks.  I normally do at least two out of three of these during the week, no problem, but the weekends are not so good.  Here's the thing, honestly, since my weigh-in on June 30th, I have lost 10 pounds.  I'm feeling pretty positive this time around.  It's taking me a bit to get back here, but I feel like I'm doing what I need to do without compromising too much on fat free or fake foods.  Everyday isn't perfect, but I'm striving to put more good days together.  The first time around when I got in the 180's, I was working out a lot.  This time around, I'm realizing that it really is about what I can do consistently.  Meal planning is getting a little easier, but not super easy by any means for me.  My Mom wasn't a huge meal planner in the traditional sense.

This week, I have meals planned for each weeknight.  The weekends are a little harder to plan because we may or may not be eating all together.  I prepared a cauliflower potato soup that smells amazing for lunch this week.  If it tastes as good as it smells, I'm in for a treat.  I have pre-tracked my dinners for the weekdays.  I tracked the soup for Monday, the spaghetti squash, marinara and the chicken meatballs that I will have on Tuesday.  They are already prepared and in the refrigerator.  I do feel like I have a good start on the week.  I hope everyone has a GREAT Monday!

What's Cooking Wednesday, May 7, 2025

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

Picnic in the Park Collab

S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
