75 Day Challenge - MyWW Purple - Day 0, September 20, 2020

  When you get frustrated with how you are doing on your weight loss journey, you have big choices to make!  You have to make the decision to continue doing what you have been doing or make changes.  For me, I'm frustrated with my progress, or lack thereof, lately, so I decided I'm going to do a version of the 75 Day Challenge for myself.  I will not be following the Challenge as it's written, but I have some goals I will be striving for during the next 75 days.   For the next 75 days, I will be focusing on: 1. Blue Dots each day following MyWW. 2. Drinking 4-28 oz. cups of water. 3. Workouts for 90 minutes each day.  It may be broken up during the course of the day. 4. Reading - 15 minutes per day. 5. Progress Photos Daily. I've created a checklist based on my specifics.  I am excited because I tend to start strong and then it fizzles.  I think this will definitely help.  I'll be trying to blog to keep me accountable.  Care to join...

Cook With Me: My Favorite Crock Pot Recipe, September 6, 2020

  Mom's Meatloaf, Crockpot Edition 1 medium onion(s), Diced 2 Egg(s) 1 cup Panko 15 oz Can Tomato Sauce 1 cup Bell pepper(s) ( I think I did closer to 2 cups) 20 oz. pkg of Kirkland Signature Organic ground beef Mix all the ingredients together, except the tomato sauce. Place in the crockpot (I use a liner for easy removal). Cook on low for 8 hours. Green: 5 Points Blue: 4 Pounts Purple: 4 Points

What's Cookin Wednesday: InstantPot Edition, September 2nd

Mexican Chicken Spaghetti 2 chicken breasts approx 1 lbs., boneless, skinless, cut into cubes 1 medium onion diced 2 cans rotel 2 cans cream of chicken soup 8 oz spaghetti noodles uncooked, broken into thirds (basically half a box you'd find in the store) 8 oz Cheddar Cheese, cubed 1 c chicken broth Add onions and cubed chicken into your pot, spread out across the bottom.  Use the Saute feature to cook the chicken a little (so that the outsides turn white). Pour 1 can of Rotel over this mixture Break your noodles into 3 equal parts (so they’re shorter) and sprinkle them on top don’t throw in in big chunks because they’ll come out clumped too, sprinkle Then pour your 2nd can of Rotel over the noodles In a bowl whisk together cans of cream of chicken, mushroom, and broth until smooth Carefully pour into your pot Close lid and steam valve and set to pressure cook, high for 8 minutes Quick releasing the pressure when done cooking the chicken and noodles is best Remove the lid after coo...

Meal Planning Monday, May 25, 2020

Happy Memorial Day friends!  Dinner plan for this week: Monday: Burgers Tuesday: Bean and Cheese Enchiladas Wednesday: Lazy Man Lasagna and garlic bread Thursday: Hamburger Stroganoff Friday: Chicken and Broccoli Rice Casserole Probably over the weekend, we'll have pizza or fish sticks, but we'll see. Breakfasts are yet undecided.  I am toying with an idea for a new to me overnight oats recipe, so I may try that and maybe some more of the strawberry shortcake overnight oats.  Nice to have a variety. Lunches, salads and sandwiches for me, most likely. Hope everyone had a great week! 

Meal Planning Monday, May 18, 2020

Our dinner plan for this week, although, as I always say, these are subject to change without notice. Monday: Twice Baked Potatoes and salad Tuesday: Taco Casserole Wednesday: Lazy Man Lasagna and garlic bread Thursday: Chicken and Broccolli Rice Casserole Friday: Fish Sticks and Mac and Cheese and a yet unnamed veggie. For breakfast, at least 2 days this week, I made a variation of the Birthday Cake Overnight Oats using what I had on hand.  I think I may have to adjust the recipe a little bit as it may be a little too sweet.  Most likely eggs for the rest of the week. Lunches for me, probably salads or sandwiches. Snacks, garlic hummus, veggies and fruit and yogurt/vanilla yogurt mix. If you want to see me talk about it on video, you can find that  here .

Cook with Me Using Trader Joe's Products Collab - Sheetpan Chicken Recipe, March 16th

Hi y'all!  Welcome to my part of the collab!  I made a sheetpan chicken and veggies topped with Everything But the Bagel Seasoning. This is what I did: 1 pound Chicken Breast 16 oz. of Simple Truth Broccoli and Cauliflower blend (I think it's a steamable bag) 3/4 pound of potatoes.  I think it was originally a pound worth but several were bad. 1 pound of asparagus Preheat oven to 350 degrees.  Line your cookie sheet with parchment paper.  I chopped my veggies and diced my chicken into small chunks.  I sprayed my veggies with Chosen Foods Avocado Oil spray.  Then added my chicken and topped liberally with the Everything But the Bagel seasoning.  Cooked for 30 minutes.
