What's Cookin' Wednesday, June 26th

Happy Hump day friends!  Hope everyone is having a good week thus far.  You know that moment when you are struggling to figure out what to have for dinner or you know one thing and you need to plan a meal around it?  Well, that happened to me.  I don't eat a lot of bread daily, sometimes it's one slice with my eggs or garlic bread with dinner, or dinner rolls or biscuits but not something I have all the time.  I had rolls that I needed to use before they went bad so I was determined that we were going to have that...but I wasn't sure what else.  Then...inspiration struck...memories from sitting in The Black Eyed Pea hit.  I would fix a veggie plate.  Would my family like it?  They definitely did enjoy it!  That night had salad, fried okra (cooked in the air fryer) and shells and cheese.  It had some variety and a little something for everyone.  I have really figured out that this may be one of my new favorite meals.  Let's be honest, the possibilities are endless.  You could roast some veggies, have steamed veggies, have salad or mashed potatoes or even baked potatoes.  I will be fixing this tomorrow night and I'll likely make it loaded mashed potatoes, broccoli, salad and crescent rolls.  There are so many options with this and I love that the ideas and inspiration just keep coming in this regard because it can be a meal that works for any family, you just have to pick what works for you and your family.

I'm also going to share a drink recipe that my family is loving right now.  Everyone has been talking about the Passion Tea Lemonade, so I tried that using the Tazo Iced Passion Tea and True Lemon Lemonade.  Seriously, have y'all tried that stuff?  It's one of my favorites the True Lemon and True Lime products have loads of flavor!  I decided I would try an "Arnold Palmer" tea using regular Lipton tea bags and the True Lemon.  Once again, big hit!  Ideas have been popping there too.  I'm so excited to try some new things!  I think my next "try" is going to be green tea and strawberry lemonade, but I need to make room in the fridge first.  On to the recipe, I used 2 Lipton Tea Bags, 1 Stur Lemonade and 1 True Lemon Lemonade packet.  I am not a big fan of the Stur powders but my husband loves the liquid mix ins and the ones I've tried have been good.  Anyway, I have been warming the water in my tea kettle and steeping the tea in an old Pyrex coffee pot.  While the tea is steeping I put one Stur packet and one True Lemon Lemonade packet in the bottom of a pitcher and fill it with 32 oz of cold water.  Once the tea has steeped, I add it to the lemonade mixture.  Viola!  Super tasty lemonade/tea treat!

  1. Thanks for reminding me! I used to do ‘veggie plate dinners’ all the time and somehow forgot about them! That will be returning to the rotation of meals very soon!!

    1. I can't believe I didn't think about them sooner myself. Mom and I used to do that some evenings and it was such a filling meal!

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
