Meal Planning Monday, April 8th

Happy Monday friends!  I hope everyone had a great weekend!  In keeping with my determination to regain that focus on my health, here's another edition of meal planning Monday.  Being transparent, we attended a wedding this weekend and my eating was not great, I mean, there was cake, pasta, bread...oh my!  I did partake.  What does this mean for me this week?  I will definitely have to make a point to keep an eye on my eating this week.  

So, the question on everyone's mind, what's for dinner this week?  I have the following on our list for this week:

Lazy Man Lasagna, Meatloaf and Mashed potatoes, bean and cheese enchiladas (or they may be burritos, I haven't decided yet), Pizza Bubble-Up Casserole, Burgers and Fries an Chicken Caesar Salad.  

Lunches will likely be turkey wraps or salads.  I have been enjoying "eggs in a basket" this past week.  I think if I continue that, I will add some fruit to it this week.

While we were at the wedding reception, I really enjoyed the fruit infused water. It has strawberries, blueberries, oranges, lime and lemon to infuse the water with a refreshing bit of sweetness.  I think I may try that for a nice change of pace this week.

My official weigh-in definitely is heading in the right direction.  I was 1.6 pounds down this week putting me at 178.  This puts me 2.4 pounds away from my most recent low.  My focus is to hit that mark and keep on moving.  This puts me at 43 pounds away from my goal.  If I lose 1 pound a week, I will hit 38 pounds by the end of the year.  I am really trying to move more along with my healthier eating.  My goal going into the week is to workout at least 30 minutes 4 days a week.  I want to start adding some strength training in as well, but I need to make sure my back is in good alignment before I start lifting weights again.  I am feeling excited about the week.  Hope everyone has a fantastic day!

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
