Tuesday Talk, December 11th

Happy, happy Tuesday!  I hope everyone has had a great start to the week!  It has been a number of years since I felt like I even remotely had a handle on my diet and meal planning.  I finally feel like I am finally getting a handle on my meal planning.  My family really enjoyed last night's meal and I think I may have to do it again.  I will probably share that on Wednesday's blog.  

My workouts are not really going right now, but I am definitely feel like I'm going down the right path.  I'm feeling good about where I am and the direction that I'm headed.  I truly feel like the mind shift is happening before my very eyes.  While I know I can enjoy my food and I do, trust me, I don't feel like I have to indulge at every meal or snack.  That is really a big step in the right direction for me.  I feel like I have reached a point where I am giving my body what it needs and I have to say that's a really great feeling!  

To be honest, I have noticed more recently that I have been more included to try things that I would not have tried in the past.  For those of you that know me well, I'm a bit stubborn about some of my ideas and combinations of food that go together.  My sweet husband and I went for our breakfast date on Saturday morning and I saw an omelette special on the board that looked like a very interesting combination.  There was a time in the not so recent past that I would have turned my nose up at it and stuck with a ham and cheese omelette instead.  I decided that I would try it.  If I didn't like it, I would just eat the biscuit part of my meal.  The diner omelette had pinto beans in it.  It was really very tasty and I hope I have the opportunity to have it again...or perhaps I will try to recreate it for myself and put my own spin on it.  One never knows...

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
