Thursday Thoughts, April 26, 2018

I don't know about the rest of you, but when I start trying to figure out what or how I should eat, it really gets confusing.  Recently, I have been reading How Not to Die by Michael Greger, M.D. with Gene Stone.  There is a wealth of information in there.  At one point, Dr. Greger mentions that he was asked to help with Oprah Winfrey's defense against the cattle industry.  As the book progressed (no I have not finished it yet), it sort of occurred to me that perhaps Weight Watchers is leaning the same way that his book suggests eating.  He advocates a primarily plant based diet.  There was a time that I would have completely balked at the idea of eating a primarily plant based diet.  I mean, I grew up on eating meat and potatoes.  Here is something that I noticed personally though...when I am on plan and eating the way that Weight Watchers recommends and focusing on more fruits and veggies, I feel better.  Drinking more water and not having soda everyday, makes me feel better.  Why wouldn't I do what makes me feel better?  Am I giving of meat?  No, I am not.  I am just eating it fewer times per week.  I will admit that giving up dairy right now is a little harder thought for me.  However, I will focus on eating less of it as well.  I am a work in progress.  If my body feels better eating less of the things I have been eating for years, then why not continue down that path?  

Many of you know that I have been a member of Weight Watchers for a number of years and while I don't always consistently follow the plan or be fond of all of the changes that have made throughout the years, the plan works when you work the plan.  The most recent change has not been everyone's favorite.  One thing that I do even with the "zero point" foods, is I continue to weigh or measure them.  Just because these foods are zero points, doesn't mean that it doesn't have calories.  So I will just take things one step at a time.

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

 S’mores Protein Bites Recipe You can find the original recipe  here  from Six Sisters' Stuff.  The one below is the way I prepared it. Ingredients 1½ cups Simple Truth Old Fashioned Oats ¼ cup crushed graham cracker crumbs ½ cup Simple Truth almond butter ½ cup raw honey ¼ cup vanilla protein powder (I used Orgain Vanilla Protein Powder) 1 teaspoon vanilla extract ½ cup mini marshmallows ¼ cup mini chocolate chips Instructions Combine all ingredients in a bowl or stand mixer until well combined. Roll dough into 1 inch balls and place on a baking sheet covered with foil or parchment paper. Place in the freezer for about 1 hour, then store in a resealable bag or airtight container in the fridge for up to a week (or in the freezer for up to a month). This original recipe says 15 servings.  I am not sure if I used a smaller scoop but I came out with 25 or so.  There were a couple that were smaller.
