Meal Planning Monday, May 20th

Happy Monday friends!  I hope everyone had a fantastic Mother's Day and a wonderful following week.  It's been a little stressed around our office because I have a co-worker out of the office on vacation.  I am glad she is able to go, but oh we miss her when she's gone!  Meal planning and preparing has been a struggle in the last week or so.  I've been experiencing some stomach issues, so I've struggling with my food.  This week, however, I am DETERMINED to get things together.  My goal is to make lunches for my family the night before.  It may not happen EVERY night, but it's a goal.  For dinners this week, the general plan is cauliflower tikka masala, a taco salad (I bought some meatless crumbles that I hope are the correct ones), ravioli and marinara sauce, breakfast for dinner, smothered bean burritos or possibly a casserole instead but haven't decided and roasted veggie bowls with quinoa, we may have a sandwich night, but things are a bit up in the air.  While some days it's still a struggle not to want to throw some meat into the meal plan, it's a getting easier to figure it out.

More goals for the week, working out three times this week and tracking my food. It may seem pretty basic and maybe it it, but it's what I need to focus on this week.

What's Cooking Wednesday, May 7, 2025

I hesitate to even call this a recipe.  I have been making this super easy, but versatile recipe for years.  My ex-grandmother-in-law made hers spicier, but for my young one (at the time I started making this) wasn't a fan of spicy foods.  So I created a cheeseburger variety of the meat pie.  It's simply Grands biscuits, hamburger meat and cheese.  I believe she used the standard biscuit, but I have been using Grands for years.  You can absolutely change this up to use different ingredients, but it's a family favorite so I haven't changed it much.  I may do a different variety soon to bring to you!   You can watch the video here:  YouTube

Happy Monday, friends!  I hope you are looking forward to a good week!  It's time again to share my meal plan for the week.  I suspect breakfasts will be fend for ourselves.  Last week, I think we all ate a lot of cereal.  Lunches this week will likely be chicken pasta meal with salad and meat pies.  I am honestly exhausted after last week. Our meals for the week are going to be relatively easy and may even be repeats of meals I have had on the plan the last several weeks. Monday: Homemade Hamburger Helper Cheeseburger Mac Tuesday: Barbacoa tacos Wednesday: Mississippi Chicken, mashed potatoes and a vegetable Thursday: Spaghetti with salad and garlic knots Friday: Easy Chicken Parmesan Saturdays and Sundays, we normally have breakfast in and do carryout for lunch or dinner.  Exercise wise, I will continue with my plan from last week, which was to do two workouts using my pedals, at least 10 minutes each) on Monday-Wednesday-Friday.  I did this las...
