What's Cookin Wednesday, July 24th

Happy Wednesday a/k/a Hump Day friends!  How's your week going?  I do have a recipe to share, but I have to tell you, Monday did not go quite as I'd planned.  I was exhausted, it was a rough night with the CPAP so I felt like I hadn't slept well.  DH and I agreed we would go "out" for lunch.  Well, my choice at the deli in our building was not a great choice and used the remainder of my points for the day.  So I started plotting and planning what I would eat for dinner...DH thought he was going to have to work late...so I offered to bring him lunch.  As this week is so busy, with a Bible Study beginning Tuesday night with EndTimes Ministries, then our regular Wednesday night service.  Given that, I knew I had to get shopping done on Monday night.

Now for the recipe.  Have you seen those CeCe's Veggie Co. Noodled (spiralized veggies) and more recently Riced?  I purchased the CeCe's Veggie Co. Riced Organic Veggie Medley and some ready cooked chicken breast.  I decided I'd throw in a couple of eggs and some Bragg Liquid Aminos to make some cauliflower fried rice.  My husband really enjoyed it, as did I.  It was quick and easy and tasty.  Some days you need convenient, but healthy.  I was impressed with the flavor combination in the Organic Veggie Medley and I think I may buy it again next week and prepare some for us to take for lunch!  My one concern is how it may reheat.  If you try it, let me know how you like it.

  1. Ohh that does sound delicious!!!!!!

So on Monday...you went higher than planned for lunch and you plotted and planned for dinner...did you keep your calories/points in line for the day with your plotting and planning???!

    1. I would have if I hadn't decided to have an ice cream sandwich after I got home from dinner with my husband at his office. It was not my best choice, but it was my choice to make and that's one of the reasons I love WW.

  2. That sounds really good! I am trying to decide what to make for dinner and easy just sounds great! I did pull some chicken breasts that I must figure out what to do with. Maybe reg rice for the family and cauli for me.
